Protein Atta Recipes: 6 Everyday Indian Dishes Beyond Plain Roti

Six practical dishes to make with protein atta, from Gujarati thepla to a quick cheela and atta ladoo, with ingredients and steps.

Protein atta is not just for phulkas. Anything you make with regular atta can usually be made with it. Here are six family-friendly recipes, each with a short ingredient list and clear steps. For all of them, remember the two basics: add water gradually (protein atta may need a little more) and rest the dough for 10–15 minutes.

Before you start

A few kitchen notes make every recipe below easier.

  • Cup size. One cup here means a standard 240 ml measuring cup, which holds about 120 g of atta.
  • Salt and spice. Adjust to your family's taste; the quantities are a starting point.
  • Protein count. Each 100 g of 28 Grains protein atta carries 46 g of protein, so even a snack made from half a cup of atta brings a useful amount.

Six recipes to try this week

1. Methi thepla (makes 8)

Ingredients

  • 2 cups 28 Grains protein atta
  • 1 cup chopped methi leaves
  • 1/4 cup curd
  • 1/2 tsp each: turmeric, red chilli powder, sesame seeds
  • 1 tsp ginger-chilli paste, 1 tbsp oil, salt

Steps

  1. Mix all ingredients except water.
  2. Add water slowly to make a soft dough. Rest 10–15 minutes.
  3. Roll thin, 7-inch circles.
  4. Cook on a medium tawa with a few drops of oil until spotted on both sides.
  5. Cool and store; theplas travel well for journeys.

2. Puffed puri (makes 12)

Ingredients

  • 2 cups protein atta
  • 1 tbsp semolina (optional, for crispness)
  • 1/2 tsp salt, 1 tsp oil
  • Water, and oil for frying

Steps

  1. Knead a firm but smooth dough, a little stiffer than roti dough. Rest 10 minutes.
  2. Roll small 4-inch circles of even thickness.
  3. Heat oil until a pinch of dough rises quickly.
  4. Slide in a puri, press gently with a slotted spoon until it puffs, flip and fry until golden.
  5. Drain and serve with aloo sabzi or chole.

3. Savoury atta cheela (makes 6)

Ingredients

  • 1 cup protein atta
  • 1 small onion, 1 tomato, 1 green chilli, all finely chopped
  • 2 tbsp coriander, 1/4 tsp ajwain, salt
  • About 1 cup water

Steps

  1. Whisk the atta and water into a lump-free, pourable batter.
  2. Stir in the vegetables and spices. Rest 5 minutes.
  3. Pour a ladle onto a greased, hot tawa and spread gently.
  4. Cook until the edges lift, flip and cook the other side.
  5. Serve with green chutney. Ready in 15 minutes.

4. Masala missi roti (makes 6)

Ingredients

  • 1 1/2 cups protein atta, 1/2 cup besan
  • 1 onion, finely chopped; 2 tbsp coriander
  • 1/2 tsp each: ajwain, kasuri methi, red chilli powder; salt
  • Water; ghee for brushing

Steps

  1. Combine everything and knead to a soft dough. Rest 15 minutes.
  2. Roll into slightly thick rotis.
  3. Cook on a tawa, then roast lightly over the flame.
  4. Brush with ghee and serve with dal or raita.

5. Steamed vegetable atta squares (serves 3)

A steamed snack for evening hunger.

Ingredients

  • 1 cup protein atta, 1/2 cup curd, about 1/2 cup water
  • 1/2 cup grated carrot and lauki
  • 1 tsp ginger-chilli paste, salt, 1 tsp fruit salt (Eno)
  • Tempering: 1 tsp oil, mustard seeds, curry leaves

Steps

  1. Mix atta, curd, water, vegetables, paste and salt into a thick batter. Rest 10 minutes.
  2. Stir in the fruit salt and pour immediately into a greased tray.
  3. Steam for 15–18 minutes until a toothpick comes out clean.
  4. Cool slightly, cut into squares and pour the tempering on top.

6. Atta gur ladoo (makes 10)

Ingredients

  • 1 cup protein atta
  • 1/3 cup ghee
  • 1/2 cup grated jaggery
  • 2 tbsp chopped almonds, 1/2 tsp cardamom powder

Steps

  1. Roast the atta in ghee on low heat, stirring constantly, for 12–15 minutes until aromatic and light brown.
  2. Take off the heat and let it cool until just warm.
  3. Add jaggery, almonds and cardamom; mix well.
  4. Shape into ladoos while warm. Enjoy in moderation; they are rich.
